I need to find out how you setup Email notifications within the system for upcoming due dates and such

Notifications will come out automatically to your user email - unless you have blocked these in settings.

Where is that setting in the settings? I have a user who is not able to get the emailed updates but we were unable to find this option in settings?

You have options in Main settings ie see link at top right of the screen... plus each project has similar settings
If you can't solve it then you might want to give us access to your account - plus the details on the issue - then we can look at it for you (Yu'd need to send the account access ie usr / pwrd
(don't worry unless you're neo-nazis or isis etc planning something baad etc we're really not interested in your work :)
But I do understand if you don't feel comfortable with that
The alternative is to do a screencast video like Jing or Tinytake to outline the exact issue

PS sign in as the user in question and adjust their "account settings"
To get the user login details clcik on username and use the "resend email" in the profile

Thanks for the follow up, the Re-send email activation did not work, however, it did send the email so I know the email is correct.

Disregard previous email. I misread the email string and replied to a previous part. The address should be pntastore.dooster.net.

For some reason JosieD's permissions are greyed out in both projects. (Your account is old so this could be for any number of legacy reasons)
Best thing is for you to delete her then re-add her to each project
